Ingredients

1 cup / 250 ml cooked brown rice
1/2 cup / 125 ml cooked edamame
1/2 cup / 125 ml shredded cabbage
1/4 cup / 60 ml shredded carrot
1/4 cup / 60 ml chopped bell pepper
2 tbsp / 30 ml Asian sesame vinaigrette (or to taste)
fresh cilantro leaves
toasted sesame seeds

Directions

  1. Arrange rice in a serving bowl; top with edamame, cabbage, carrot, peppers and quartered eggs. Drizzle with vinaigrette and garnish with cilantro and sesame seeds.

Tips

  1. Replace the Asian vinaigrette with sweet Thai chili sauce.

  2. Brown rice can be replaced with cooked quinoa, barley, farro or couscous.
