Sausage, Egg and Cheese-Stuffed Baguette

Ingredients
1 | baguette (350 g) |
1 1/2 cup / 375 g | Egg Creations Whole Eggs Original, well shaken |
3/4 cup / 170 g | chopped cooked Italian sausage |
4 | processed mozzarella cheese slices, cut diagonally in half |
2 tsp / 10 ml | chopped fresh parsley |
Directions
HEAT oven to 350ºF (180°C).
CUT 1/4-inch-thick horizontal slice off top of baguette; set aside. Hollow out bottom half of baguette, leaving 1/2-inch-thick shell. Cut enough of the reserved baguette top into 3/4-inch cubes to measure 1/2 cup. Reserve remaining bread top and removed bread for another use.
WHISK eggs in medium bowl until blended. Add bread cubes; stir until evenly coated.
PLACE hollowed-out bread on parchment-covered baking sheet; fill with sausage, then egg mixture.
BAKE 35 min. or until egg mixture is set, topping with cheese pieces for the last 5 min. Sprinkle with parsley.
Tips
Substitute 60 g chopped deli ham or prosciutto for the chopped cooked sausage.
Serve with a colourful fresh fruit salad.
