Ingredients

2 tbsp / 30 ml cream cheese
1 tsp / 5 ml prepared horseradish (extra hot if preferred)
1 tsp / 5 ml drained capers
1 bagel (Everything-styled or alternate as preferred)
1 package / 88 g EGGS2go! Omega 3 Hard Boiled Snack Pack
2 oz / 60 g smoked salmon
6 slice cucumber
1 batch pickled Onions (See Tip)
2 oz Red onion, thinly sliced
2 fluid ounce White wine vinegar
fresh dill sprigs

Directions

  1. Blend cream cheese with horseradish until smooth. Spread in a small bowl or container and top with capers.

  2. Assemble snack box by combining bagel, smoked salmon, sliced egg, cucumber, horseradish cream cheese, pickled onions in a re-sealable container. Reserve in refrigerator for up to 1 day.

Tips

  1. To make pickled onions, combine 1/4 cup (50 ml) thinly sliced red onion with 1/4 cup (50 ml) white wine vinegar in a stainless steel bowl. Let mixture stand for 20 minutes, stirring once; strain onions and transfer to a small bowl or container.
