Ingredients

Bagel Chips:
1 bagel, sliced thinly into rounds
1 tbsp / 15 ml canola oil or melted butter
'EB' Ranch Dressing:
1/4 cup / 50 ml sour cream
1/4 cup / 50 ml mayonnaise
2 tbsp / 30 ml milk
1 1/2 tsp / 7 ml white wine vinegar
1 1/2 tsp / 7 ml canola oil
2 tbsp / 30 ml minced fresh chives or green onion
2 tsp / 10 ml Everything Bagel Seasoning (purchased or see recipe below)
'EB' Cobb Salad:
1 pouch EGGS2go! Omega 3 Hard Boiled 6 Pack Pouch
2 tbsp / 30 ml Everything Bagel Seasoning (purchased or see recipe below)
8 cup / 2 l chopped romaine lettuce
1 cup / 250 ml halved grape tomatoes
1 cup / 250 ml sliced cucumber
1 avocado, sliced (optional)
1/2 cup / 125 ml sliced red onion

Directions

  1. Bagel Chips: Toss sliced bagel with oil and spread on a parchment paper lined baking sheet. Toast in a 375°F/190°C oven for 10 to 12 minutes or until golden and crisp.

  2. 'EB' Ranch Dressing: Whisk sour cream with mayonnaise, milk, vinegar, canola oil, chives and seasoning until smooth. Reserve in refrigerator for up to 3 days. Makes 2/3 cup/150 ml.

  3. 'EB' Cobb Salad: Cut the eggs in half. Arrange seasoning in a shallow bowl; dip the cut sides of the eggs in the seasoning. Set aside.

  4. Arrange the lettuce, tomatoes, cucumber, avocado (if using) and red onion in a large shallow bowl or platter. (Or divide between individual serving bowls.)

  5. Top salad ingredients with seasoned eggs and bagel chips and serve with dressing on the side to add to taste.

Tips

  1. Add extra protein and flavour with the addition of sliced cooked chicken, bacon, ham or even smoked salmon.

  2. Add cubed cheese such a Swiss or Havarti for an indulgent tasty topping.

  3. For a shortcut, replace the homemade bagel chips with crumbled store-bought bagel chips.

  5. Use in our Cobb salad or as a delicious, multipurpose seasoning for all your favourite egg dishes including deviled eggs, fried eggs and omelettes.

  8. tbsp/30 ml each white and black sesame seeds

  9. tbsp/30 ml dried minced onion

  10. tbsp/15 ml each dried minced garlic, poppy seeds and flaked sea salt

  11. Directions

  12. Mix all ingredients together and store in an airtight container until ready to use or for up to 1 month. Makes about 1/2 cup/125 ml.

  13. Tips:

  14. Do NOT substitute powder or granules for the onion and garlic, as the mixture won't have the correct blend and flavour.

  15. Most ingredients should be available in the spice aisle at major supermarkets or at a bulk food store. Some sushi departments carry a toasted white and black sesame blend, which can also be used.

  16. This seasoning blend makes a great handmade gift along with a copy of the Cobb salad recipe - of course!
