Ingredients
1 cup / 250 ml | EGG Creations! Fat Free Original or Naturegg Omega Plus, well shaken |
1 cup / 250 ml | chopped spinach leaves |
1/4 cup / 50 ml | shredded Asiago cheese |
1 tbsp / 15 ml | light mayonnaise |
1/4 tsp / 1 ml | prepared horseradish |
Directions
Coat a large, nonstick skillet with cooking spray; set over medium heat. Add eggs. Cook, covered, for 3 minutes. Meanwhile, mix together spinach, cheese, mayonnaise and horseradish. Arrange over one side of omelet; fold to enclose. Cover and remove skillet from heat; let stand for 2 minutes.
