Ingredients
2 tsp / 10 ml | non-hydrogenated margarine |
1 cup / 250 g | Egg Creations Whole Eggs Original, well shaken |
4 | corn tortillas (6 inch/15 cm), warmed |
4 | processed cheese slices |
1/2 cup / 125 ml | chopped tomatoes |
1 | avocado, chopped |
1 tbsp / 15 ml | hot pepper sauce |
1/4 cup / 50 ml | chopped fresh cilantro |
1 | lime, cut into 8 wedges |
Directions
Melt margarine in small nonstick skillet on medium-low heat. Whisk eggs until blended. Add to skillet; cook for 3 minutes or until set, stirring occasionally.
Top tortillas with cheese slices, eggs, tomatoes, avocados, hot pepper sauce and cilantro; fold in half.
Serve with lime wedges.
Tips
Serve topped with salsa and sour cream.
Serve with fresh fruit to round out the meal.
