Directions

  1. Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone mats.

  2. Beat butter, sugar, vanilla and salt using an electric mixer until fluffy; add egg whites and beat just until smooth, scraping the bowl as needed. Blend flour with baking powder, baking soda and salt; add to mixer and beat on low until a thick dough forms.

  3. Use a 1 oz (30 ml) cookie scoop to portion onto baking sheets, spacing 3 inches apart as cookies will spread as they bake.

  4. Bake, in batches, for 12 to 14 minutes or until golden around the edges. Remove from oven; cool for 5 minutes then transfer to a rack to cool completely.

  5. Royal Icing: Whisk egg whites until fluffy, whisk in icing sugar until a thick but pourable icing forms.

  6. To Decorate: Spoon icing onto cooled cookies, allowing it to pool over the sides. Immediately add marshmallows, cut-side-down. Carefully stick an orange sprinkle into the marshmallow. Use gel frosting or an edible marker for eyes. Use sprinkles, candies or chocolate chips for arms, hats, buttons and other décor (as desired). Let stand until icing sets.

Tips

  1. Kitchen shears are handy for cutting marshmallows.

  2. Cookies can be made ahead and stored at room temperature for up to 5 days or frozen for up to 2 months.

  3. Decorated cookies are best eaten the same day.

  4. A visit to a bulk food store can help you get creative with the snowman décor. Great options for decorating include small candies for the buttons, chocolates or gum drops for the hat, chocolate sprinkles or pretzels for the twig arms etc.
