Ingredients

1 cup / 250 ml EGG Creations! Fat Free Original or Naturegg Omega Plus, well shaken
1 cup / 250 ml chopped spinach leaves
1/4 cup / 50 ml shredded Asiago cheese
1 tbsp / 15 ml light mayonnaise
1/4 tsp / 1 ml prepared horseradish

Directions

  1. Coat a large, nonstick skillet with cooking spray; set over medium heat. Add eggs. Cook, covered, for 3 minutes. Meanwhile, mix together spinach, cheese, mayonnaise and horseradish. Arrange over one side of omelet; fold to enclose. Cover and remove skillet from heat; let stand for 2 minutes.
