Grilled Egg and Ratatouille Pizza

Ingredients
1 cup / 250 ml | chopped fresh vegetables (zucchini, eggplant, peppers, onions, etc.) |
1 tsp / 5 ml | vegetable oil |
1/4 cup / 50 ml | pizza or pasta sauce |
1 tbsp / 15 ml | balsamic vinegar |
1/2 tsp / 2 ml | each salt and pepper |
1 | 12” (30 cm) pre cooked pizza crust with 1/2” (1 cm) high edges |
1/2 cup / 125 g | Naturegg Omega Plus cracked eggs or Egg Creations Fat Free Original, well shaken |
1/4 cup / 50 ml | grated Parmesan cheese |
Directions
In skillet , heat oil over medium-high heat. Sauté vegetables 3 minutes. Remove from heat, stir in pizza sauce, vinegar, salt and pepper. Spread over pizza crust.
Pour liquid eggs evenly over top.
Place pizza directly on oven rack and bake in preheated 400°F (200°C) oven 12-15 minutes or until eggs are set. Sprinkle cheese over top.To cook on the barbecue: Place pizza directly in the middle of the BBQ rack for a summertime treat!
Tips
If using fresh pizza dough, assemble toppings on uncooked dough pressed onto pizza pan.
Instead of sautéing vegetables, use leftover or deli purchased grilled vegetables, chopped. Pizza may also be grilled on barbecue over medium heat. Grill covered, rotating occasionally, for 10 minutes.
Breakfast Pizza: Spread ½ cup (125 mL) pizza sauce over crust and top with thinly sliced ham. Pour over egg and cook as directed above.
