Ingredients
2 tsp / 10 ml | butter |
1 cup / 250 g | Egg Creations Whole Eggs Original, well shaken |
4 | small flour tortillas, warmed |
4 | cheddar cheese slices |
1 | avocado, chopped |
1/2 cup / 125 ml | salsa |
Directions
Melt butter in small nonstick skillet on medium-low heat. Whisk eggs until blended. Add to skillet; cook for 3 minutes. or until set, stirring occasionally.
Top tortillas with cheese, eggs and avocados. Fold in half.
Cook quesadillas, in batches, in large nonstick skillet on medium heat 2 min. on each side or until lightly browned on both sides. Serve with salsa.
Tips
Garnish with chopped fresh cilantro before serving.
Substitute 1 cup (250 mL) shredded cheddar cheese for cheese slices.
