Ingredients

2 tsp / 10 ml butter
1 cup / 250 g Egg Creations Whole Eggs Original, well shaken
4 small flour tortillas, warmed
4 cheddar cheese slices
1 avocado, chopped
1/2 cup / 125 ml salsa

Directions

  1. Melt butter in small nonstick skillet on medium-low heat. Whisk eggs until blended. Add to skillet; cook for 3 minutes. or until set, stirring occasionally.

  2. Top tortillas with cheese, eggs and avocados. Fold in half.

  3. Cook quesadillas, in batches, in large nonstick skillet on medium heat 2 min. on each side or until lightly browned on both sides. Serve with salsa.

Tips

  1. Garnish with chopped fresh cilantro before serving.

  2. Substitute 1 cup (250 mL) shredded cheddar cheese for cheese slices.
