Fried Rice with Poached Egg

This delicious fried rice topped with a perfectly poached egg is destined to become a family favourite! Recipe by Martin Goyette.

Ingredients

4 cup cooked rice
1 yellow onion
3 green onions (1 for garnish)
4 Naturegg Omega 3 eggs, separated
1/2 cup vegetable oil
2 cup frozen carrot and pea mix
salt and pepper, to taste
1 tsp sesame oil
1 tbsp maple syrup
1/2 cup soy sauce
ground chili pepper (optional)
4 Naturegg Omega 3 eggs, poached (optional)

Directions

  1. Cook 4 cups of rice. Set aside to cool.

  2. Chop all the onions and set aside.

  3. Separate 4 Naturegg Omega 3 egg yolks from whites. Mix egg yolks together and add to the cooled rice. Set aside. Reserve egg whites for step 4.

  4. In a hot wok with about 1 tbsp vegetable oil, cook onions and frozen vegetables until onions are cooked. Add egg whites, season with salt and pepper and continue cooking for 2 minutes. Set aside in a separate dish.

  5. In a hot wok with 1/3 cup vegetable oil, fry the rice over high heat for about 3 minutes, stirring regularly. Add the sesame oil, maple syrup, soy sauce, ground chili pepper (optional), and vegetable mixture from step 4. Stir gently and cook over medium-high heat for about 3 minutes, until heated through.

  6. Poach 4 Naturegg Omega 3 eggs to top each fried rice dish (1 per dish, optional). Sprinkle chopped green onions on top (optional).
