Ingredients

1/4 cup / 50 ml | seasoned dry bread crumbs |
8 / 400 g | Naturegg Nature’s Best shell eggs (or Egg Creations Whole Eggs Original, well shaken) |
1 cup / 250 ml | smooth low-fat cottage cheese |
1 package / 300 g | frozen spinach, chopped, thawed and squeezed dry |
1/2 tsp / 2 ml | lemon pepper |
1/4 tsp / 1 ml | pepper |
1/4 tsp / 1 ml | hot pepper sauce |
1/2 cup / 125 ml | Cheddar cheese or Swiss cheese, grated |
Directions
Spray a 2 quart (2 L) square casserole dish with cooking spray.
Sprinkle bread crumbs to coat bottom and sides of dish. Set aside.
Whisk eggs with cottage cheese, spinach, lemon pepper and hot pepper sauce.
Spread over bread crumbs.
Sprinkle with shredded cheese.
Bake in a 350⁰F (180⁰C) oven for 20 to 25 minutes or until a knife inserted near the centre comes out clean.
Let stand for about 5 minutes before serving.
