Ingredients

4 bananas, sliced
1/4 cup / 50 ml chopped, toasted walnuts
1/4 cup / 50 ml maple syrup
4 thick slices whole-grain bread (1" / 2.5 cm)
2 Naturegg Omega 3 Eggs
4 tsp / 20 ml unsalted butter, divided
2/3 cup / 150 ml 1 or 2% milk
1 tsp / 5 ml vanilla extract
1/4 tsp / 1 ml ground cinnamon

Directions

  1. Toss half the sliced banana with the walnuts and maple syrup; set aside. Use a sharp knife to cut a deep pocket into the side of each piece of bread. Divide the remaining banana slices evenly between the pockets.

  2. Whisk the eggs with the milk, vanilla and cinnamon. Arrange the stuffed bread in small casserole dish and pour the egg mixture over top. Let soak, carefully turning each piece once, for 10 minutes.

  3. Melt half the butter in a large, nonstick skillet set over medium heat. Add the stuffed bread to the skillet and cook for 5 minutes. Add the remaining butter and turn the pieces; cook for an additional 5 minutes or until golden. Top with the reserved banana-nut mixture to serve.

Tips

  1. Substitute chopped, toasted pecans for the walnuts.
