Egg White Southwestern Quesadillas

Ingredients
2 tsp / 10 ml | butter |
1 cup / 250 ml | Naturegg Simply Egg Whites |
4 large | whole wheat tortillas |
1 cup / 250 ml | shredded low-fat cheddar cheese |
1/2 cup / 125 ml | salsa |
1 | avocado, chopped |
Directions
Melt butter in small nonstick skillet on medium-low heat. Shake egg whites well and pour into skillet; cook for 1-2 minutes, or until bottom is golden and eggs are no longer runny. Using a rubber spatula, fold the other half of the omelette over.
Top tortilla with cheese and avocado. Slide omelette onto tortilla and fold in half.
Place quesadilla on skillet to warm, 1-2 minutes or until tortilla is browned and cheese has melted. Repeat with remaining ingredients to make the other servings. Serve with salsa.
Tips
Garnish with fresh cilantro before serving.
