Ingredients
1 cup / 250 g | EGG Creations! Fat Free Original or Naturegg Omega Plus, well shaken |
1/2 tsp / 2 ml | chili powder |
1/4 tsp / 1 ml | each salt and pepper |
1 | clove of garlic, minced |
2 tsp / 10 ml | vegetable oil |
4 | large soft flour tortillas |
2 | green onions, chopped |
1 cup / 250 ml | shredded lettuce |
1 cup / 250 ml | shredded low fat cheddar cheese |
1/4 cup / 50 ml | chopped cilantro |
1/2 cup / 125 ml | prepared tomato salsa |
Directions
Whisk together liquid eggs, chili powder, salt and pepper.
In skillet, heat oil over medium heat, sauté garlic a few seconds. Pour in egg mixture; cook, stirring frequently, until eggs are softly scrambled. Remove from heat.
Spoon about ¼ cup (50 ml) egg mixture onto middle of each tortilla. Top with green onions, lettuce, cheese, cilantro and salsa; roll up. Serve immediately.
