Ingredients
1/2 cup / 125 ml | each fresh or frozen (unthawed) blueberries and raspberries |
1 tsp / 5 ml | vanilla extract |
1/2 cup / 125 ml | canola oil |
1/2 tsp / 2 ml | each baking soda and salt |
1 tsp / 5 ml | baking powder |
1/2 cup / 125 ml | granulated sugar |
1 1/4 cup / 300 ml | all-purpose flour |
1/3 cup / 75 ml | EGG Creations Fat Free Original, well shaken |
3/4 cup / 175 ml | milk |
1 cup / 250 ml | large flake oats |

1 tsp / 5 ml | canola oil |
1 tsp / 5 ml | granulated sugar |
1 tbsp / 15 ml | all-purpose flour |
2 tbsp / 30 ml | large flake oats |

Directions
Crumble: Stir oats with flour and sugar; blend in oil with a fork until crumbly. Set aside.
Muffin: Stir oats with milk and eggs in a large bowl; let stand for 20 minutes. Meanwhile, line a 12-cup muffin pan with paper liners. Preheat oven to 375°F (190°C).
Whisk flour with sugar, baking powder, baking soda and salt in a separate bowl.
Blend oil and vanilla into oat mixture, mixing well. Add flour mixture and stir until almost no dry streaks remain. Fold in berries until evenly distributed.
Divide batter between muffin cups; sprinkle with reserved crumble. Bake for 22 to 25 minutes or until tops spring back when lightly touched. Serve warm or at room temperature.
Tips
Muffins can be held in an airtight container at room temperature for up to 2 days or frozen for up to 1 month.
