Ingredients

1 cup / 250 g Egg Creations Fat Free Original, well shaken
1/2 cup / 125 ml fresh peas or thawed if frozen
1/3 cup / 80 ml crumbled goat cheese

Directions

  1. Spray large nonstick skillet with cooking spray and place on medium heat. Pour the eggs into the skillet. Tilt the skillet to distribute the mixture evenly. Sprinkle the peas in the skillet.

  2. Cook covered for 2 minutes or until almost firm. Sprinkle the cheese evenly over the egg mixture. Cook uncovered for 2 minutes or until cheese is softened and eggs are set.

  3. Gently loosen the omelette from the pan with a soft spatula and slide it on a plate. Cool slightly before rolling omelette into a tight pinwheel. Slice the roulade into 1-inch (2.5 cm) pieces.

Tips

  1. Try goat cheese with herbs instead of the plain goat cheese.
