Ingredients
3/4 cup / 175 ml | fat-free vanilla Greek yogurt |
1 tsp / 5 ml | finely grated orange zest |
4 | Naturegg Omega 3 |
8 | slices, day-old whole-wheat bread, about 1/2-inch (1 cm) thick |
2 cup / 500 ml | frozen mixed berries, such as raspberries, strawberries or blueberries, thawed |
1 1/4 cup / 300 ml | 1 or 2% milk |
1/2 tsp / 2 ml | ground cinnamon |
2 tsp / 10 ml | vanilla extract |
Directions
Stir the yogurt with the orange zest; set aside.
Pour the eggs into a shallow dish. Coat a large, nonstick skillet with nonstick spray; set over medium heat. Whisk eggs with milk, vanilla and cinnamon in a shallow bowl.
Working in batches, soak both sides of the bread in the egg mixture until saturated; transfer to the skillet. Cook for 2 to 3 minutes per side or until golden. Repeat using remaining bread and egg mixture. (Coat the skillet with nonstick spray between batches as needed.)
Spread the yogurt mixture evenly over 4 pieces of French toast; arrange a layer of berries over the yogurt. Cap with remaining French toast.
Tips
Thaw berries on a paper towel-lined plate to blot any excess fluid.
Using slightly stale bread soaks up more egg and makes better French toast.
Use fresh berries when in season.
