Ingredients
2 package | EGGS2go! Omega 3 Hard Boiled Snack Pack, (88 g each) |
1/2 cup / 125 ml | light sour cream |
1/4 cup / 50 ml | light mayonnaise |
1/4 cup / 50 ml | mixed chopped fresh herbs such as chives, parsley, tarragon and/or dill |
2 tsp / 10 ml | Dijon mustard |
1/4 tsp / 1 ml | each salt and pepper |
paprika | |
Assorted dipper such as fresh vegetables, crackers and/or fingers of pumpernickel or rye bread |
Directions
Grate the eggs on a box grater. Blend the eggs with the sour cream, mayonnaise, herbs, Dijon, salt and pepper until well combined. Transfer to a serving bowl and sprinkle with paprika. Let stand for at least 15 minutes before serving to meld flavours. Serve with your favourite dippers.
Tips
For a smoother texture, prepare the dip in a food processor.
For extra kick, sprinkle with smoked paprika.
Reserve the dip in the refrigerator for up to 2 days.
