Ingredients

1 pouch / 264 g EGGS2go! Omega 3 Hard Boiled 6 Pack Pouch
1/2 avocado, sliced
1 large leaf lettuce, torn into 6 pieces
2 slice cooked bacon, cut into thirds
6 small slices Cheddar cheese, trimmed to fit
Topping "Everything bagel" seasoning* or freshly ground black pepper

Directions

  1. Pat eggs dry and carefully slice in half, lengthwise. Trim a very thin slice off the bottom half of each egg so that they can stand up (like a bun).

  2. Layer bottom halves with avocado, lettuce leaves, bacon and cheese. Cap with the top half of the hard-boiled eggs and secure with a pick.

  3. Sprinkle lightly with bagel seasoning or freshly ground black pepper (if using).

Tips

  1. *See Everything Bagel Cobb Salad recipe for a homemade recipe for the seasoning blend.

  2. Can be made ahead and reserved in the refrigerator for up to 1 day.
