Tower of Omelets Florentine, Sausages and Hollandaise Sauce

For brunch, eggs are a must! Why not present them with style, like in a restaurant? Here’s a tasty idea for presenting your eggs and sausages in style.

Ingredients

1 cup Baby spinach (raw)
3 EGG Bakes! Egg Patties (there are 4 in a package)
2 Italian breakfast sausages, diced, pre-cooked
Hollandaise sauce:
1/2 pound / 225 g Cold butter
2 Egg yolks
Juice from half a lemon
1/2 tsp / 3 ml Salt and pepper
2 tbsp / 30 ml Finely chopped chives

Directions

  1. FOR THE HOLLANDAISE SAUCE:

  2. Place all the ingredients in a heavy-bottomed saucepan.

  3. Cook on medium heat.

  4. Continuously stir with a whisk (do not allow to boil).

  5. Add the chives.

  6. Adjust the seasoning.

  7. Set aside.

  8. FOR THE MAIN DISH:

  9. Heat up the egg patties as indicated on the packaging.

  10. In a non-stick pan, heat up the Italian sausages for 5 to 8 minutes. Set aside.

  11. BUILDING THE TOWER ON THE PLATE:

  12. Place the raw baby spinach at the bottom of the plate.

  13. Set down 1 egg patty.

  14. Stack 1 sausage on top.

  15. Repeat.

  16. Set down 1 more egg patty.

  17. Stack 1 more sausage on top.

  18. Then finish with the last egg patty.

  19. Top with hollandaise sauce.

  20. Garnish with fresh chives.
