Here’s my Sunday ritual: I boil a dozen eggs, write HB on them (so I know they are hard boiled) and refrigerate them. They last seven days in the fridge and are a convenient part of my family’s weekly meals and snacks. How do we enjoy these eggs? Here are some of our favourite ways:
Old school devilled eggs – with a twist!
For classic devilled eggs, the whites are cut in half and placed on a serving tray, like little cups. The yolks are collected in a bowl to create the filling, and are usually mashed with mayonnaise, a hint of mustard and some paprika. Definitely perfection, but we like to mix it up a bit to keep it interesting:
- Guacamole Devilled Eggs: We mash the yolks with guacamole instead of mayonnaise, and garnish with a tortilla chip.
- Lemon Hummus Devilled Eggs: For these beauties, the yolks are mashed with hummus and lemon juice, and then topped with sliced kalamata olives.
- Caesar Devilled Eggs: We mix the mashed up yolks with creamy Caesar dressing instead of mayo, and top them with a piece of romaine lettuce and a garlicky crouton.

Avocado toast
The idea of adding sliced or mashed avocado to toast instead of butter is a hot trend, and it’s super delicious. The only drawback? It’s a meal without much protein. That’s where hard-boiled eggs come in! I top my avocado toast with spinach, tomato and slices of two hard boiled eggs. The eggs add 12 grams of protein. Awesome salads
I often enjoy a meal-sized salad for lunch, and I combine my vegetables with lots of protein. I’m a fan of classic niçoise salad , which combines tuna, green beans, potatoes and hard-boiled eggs on a bed of greens, and is topped with a Dijon vinaigrette. Sometimes I mix it up and make a Cobb salad (hardboiled eggs paired with bacon – yum), and I use jars so it’s easy to tote these to work. And here’s a neat fact: a study from 2015 showed that pairing eggs with salad helps the body better absorb the antioxidants (carotenoids such as lutein) from salad vegetables.
Marinated eggs
I often slice my hard-boiled eggs and add a sprinkle of salt. It’s delicious, but I elevated that to the next level when I found a unique way to marinate eggs in a soy sauce brine, which infuses that salty, savoury flavour right into the whites. I whisk the following ingredients together in a large mason jar or container:
- ¾ cup hot water (so the sugar dissolves) tuna
- 1 tbsp white sugar
- ¼ cup rice vinegar or white wine vinegar
- ½ cup reduce sodium soy sauce
- Pinch red chilli flakes (optional)
Then I add six hard-boiled eggs, and let them marinate for about 24 hours before I enjoy them. They are great sliced into a sandwich or atop a ramen noodle bowl. Short on time? Topped and dipped
Another way to add savoury goodness is with a variety of spice topping or dry dip options. I slice my egg into quarters, then sprinkle them with one of these spice blends:
- Gomasio: a Japanese condiment made from toasted sesame seeds, salt and roasted seaweed.
- Za’atar: A Middle Eastern spice blend made with oregano, sumac, sesame seeds, thyme and salt.
- Montreal Steak Spice: Yep, it’s not just for steaks. This mix contains dried onions and garlic, peppercorns, mustard seeds, rock salt, and a bit of chili spice.
