Peach Clafoutis

“Clafoutis” (pronounced kla-foo-tee) is a traditional French dessert made with seasonal fresh fruit. This delicious fruity, custardy treat is perfect to serve at any summer gathering.

Ingredients

2/3 cup flour
1/3 cup granulated sugar
1 tsp baking powder
3 Naturegg Omega 3 eggs
1 tsp vanilla extract
1/4 cup butter, melted
4-5 peaches, washed
icing sugar, for serving

Directions

  1. Preheat oven to 400°F (200°C).

  2. In a mixing bowl, add flour, sugar and baking powder, mix.

  3. In another bowl, beat the eggs and then add the vanilla extract and melted butter. Whisk well.

  4. Add wet ingredients to the dry ingredients and stir until fully incorporated.

  5. Grease 6 ramekins.

  6. Using a knife and a cutting board, cut the peaches into slices. Add about 5 slices in each ramekin.

  7. Pour the batter into the ramekins. Fill ¾ of the way, leaving some space for the clafoutis to rise while cooking, and then deflate.

  8. Bake for 20 to 25 minutes or until the blade of a knife comes out clean from the center of the clafoutis.

  9. Allow to cool then dust some icing sugar and serve.

Tips

  1. Cut an extra peach to add some fresh fruit on top of the clafouti.

  2. You can use any fresh fruit you love for this recipe.
