Ingredients

1 cup cooked quinoa
1/2 cup cooked black beans
1/2 avocado
1/4 cup chopped bell pepper
1/4 cup cooked corn
2 tbsp red or green salsa (or to taste)
sliced green onion (garnish)
grated cheddar cheese (garnish)
1 package EGGS2go! Omega 3 Hard Boiled Snack Pack, quartered
1 tbsp hot sauce (or to taste)

Directions

  1. Arrange quinoa in a serving bowl; top with black beans, avocado, peppers, corn and Hot Sauce eggs. Drizzle with salsa and garnish with green onion and Cheddar cheese.

Tips

  1. Replace the Cheddar cheese with crumbled feta cheese.

  2. Quinoa can be replaced with cooked couscous, barley, farro or rice.

  3. For a lunchtime make ahead: layer the ingredients into a re-sealable container or Mason jar in the order given. Refrigerate for up to 2 days.
