Ingredients
1 cup | cooked quinoa |
1/2 cup | cooked black beans |
1/2 | avocado |
1/4 cup | chopped bell pepper |
1/4 cup | cooked corn |
2 tbsp | red or green salsa (or to taste) |
sliced green onion (garnish) | |
grated cheddar cheese (garnish) | |

Directions
Arrange quinoa in a serving bowl; top with black beans, avocado, peppers, corn and Hot Sauce eggs. Drizzle with salsa and garnish with green onion and Cheddar cheese.
Tips
Replace the Cheddar cheese with crumbled feta cheese.
Quinoa can be replaced with cooked couscous, barley, farro or rice.
