Egg Foo Young on a Big Green Egg

This delicious Egg Foo Young recipe created by Chef Dez (www.chefdez.com) is a great Chinese take-out favourite. Picture a Chinese omelet with sauce!

Ingredients

4 Naturegg Omega 3 shell eggs, beaten
6 tbsp finely grated carrot
4 tbsp finely chopped cabbage (green, savoy, napa, etc.)
4 tbsp thinly sliced green onion
2 tsp *sambal oelek
4 tsp soy sauce
2 tsp oyster sauce
2 tsp finely grated fresh ginger
4 tsp canola oil, divided
100 g ground pork
finely sliced chives, for garnish
sesame seeds, for garnish
Sauce:
1 1/2 tsp cornstarch
1 1/2 tsp oyster sauce
1 1/2 tsp soy sauce
1/2 tsp sugar
1/2 cup low-sodium chicken broth

Directions

  1. Set up your Big Green Egg for direct cooking and preheat to 400°F.

  2. In a 2-cup sized measuring cup (or larger) thoroughly combine the eggs, carrot, cabbage, green onion, sambal oelek, 4 teaspoons soy sauce, 2 teaspoons oyster sauce, and ginger. Set aside.

  3. Place a cast iron plancha griddle in the Big Green Egg for 10 minutes to heat up. Add 2 teaspoons of the canola oil and the ground pork. Cook with the dome closed, but stirring occasionally, until the pork is browned and crispy, about 7 to 8 minutes. Remove the cooked pork from the griddle using a spatula and set aside to cool slightly.

  4. Stir the cooked pork into the egg mixture from step 2.

  5. For cooking the Egg Foo Young, you can either use the existing hot griddle for ‘free-form’ looking omelets, OR for more perfect looking circular omelets heat an 8-inch cast iron pan for 10 minutes in the Big Green Egg.

  6. For each omelet, brush the griddle or pan with 1/2 teaspoon of the canola oil. Pour a rounded 1/3 cup measure of the egg/pork mixture onto the griddle or into the cast iron pan, and smooth out the mixture. Close the dome and cook for approximately 2 minutes until the egg mixture has completely set and the underside has browned. Carefully flip it over, close the dome, and cook the other side for 1 minute until the second side has also browned. Remove from the griddle/pan and cover with foil to keep warm.

  7. Repeat step 6 three more times, to make 4 omelets total.

  8. While cooking the omelets, combine the sauce ingredients in a separate small pot and bring to a full boil to thicken. Remove the sauce from the pot and set aside.

  9. Garnish the cooked Egg Foo Young with the sauce, sliced chives, and sesame seeds.

Tips

  1. *Sambal oelek is an Indonesian chili sauce or paste typically made from a mixture of a variety of chili peppers. One can usually find it down the imported (or Asian) food aisle of major grocery stores.

  2. Omit the pork for a vegetarian alternative.
