Cottage Cheese Flatbread

This easy and delicious Cottage Cheese Flatbread is made with just two main ingredients: cottage cheese and eggs! Perfect for a healthy and protein-packed meal or snack. Enjoy it plain or with your favourite toppings!

Ingredients

1 cup cottage cheese
2 Naturegg Nature’s Best eggs
salt and pepper to taste
herbs (see tips)
1 tsp pesto
2 handful baby spinach
4 slice turkey ham
1/2 tomato, sliced
1/2 cucumber, sliced

Directions

  1. Preheat your oven to 350°F (175°C).

  2. In a food processor, combine cottage cheese and eggs. Blend until smooth and silky.

  3. Line a baking sheet with parchment paper or lightly grease it.

  4. Pour the cottage cheese mixture onto the prepared baking sheet.

  5. Place the baking sheet in the preheated oven. Bake for 40 minutes, or until the flatbread is firm and lightly golden.

  6. Remove the flatbread from the oven and let it cool slightly.

  7. Cut into 2 and garnish with your favourite toppings or try our variation with pesto, spinach, turkey, tomato and cucumber.

Tips

  1. Feel free to add your favourite herbs such as parsley, dill, or chives for added flavour.

  2. Customize with various toppings and use it as a versatile base for different sandwiches.
