Ingredients
2 tbsp / 30 ml | fine dry breadcrumbs |
2 oz / 60 g | sodium-reduced ham, finely chopped |
1/2 cup / 125 ml | very finely chopped green pepper |
1/4 cup / 50 ml | very finely chopped onion |
2 cup / 500 g | Egg Creations Fat Free Garden Vegetable, well shaken |
1/2 cup / 125 ml | shredded Cheddar cheese |
Directions
Preheat the oven to 400°F (200°C). Lightly coat a 24-cup mini muffin pan with nonstick cooking spray. Sprinkle the cups evenly with breadcrumbs; rotate the pan around until all the cups are well-coated. Shake out any excess crumbs.
Toss the ham with the green pepper and onion; add an equal portion to each muffin cup. Pour the eggs into each cup to fill just below the rim; sprinkle with cheese.
Bake for 10 to 12 minutes or until set. Serve warm or at room temperature. Store, covered and in the refrigerator, for up to 3 days.
Tips
Use 3/4 cup (175 mL) combination of other favourite vegetables such as chopped mushrooms, zucchini and tomato.
