Ingredients

1 1/3 cup Egg Creations Whole Eggs Original
2 cup Diced tomatoes
12 Basil leaves, finely chopped
2 clove Big garlic cloves, minced
1 tbsp Olive oil
Salt and pepper to taste

Directions

  2. Cook for about a minute or until the indicator light turns green, depending on your waffle maker. There's no need to flip the waffle.

  3. Use tongs to remove the waffle from the maker and place it on a plate. Repeat process 3 times to make the remaining waffles.

  4. In a small bowl, mix together diced tomatoes, basil, garlic, and olive oil. Season with salt and pepper to taste.

  5. Arrange the waffles by cutting them into quarters and place them around the bowl of bruschetta mix on a cutting board or plate. Serve immediately, especially if topped with the bruschetta mix, to prevent the waffles from becoming soggy.

Tips

  1. For added flavor, consider drizzling some balsamic reduction over the waffles or adding mozzarella.
