Shrimp and Avocado Omelettes
Buttery shrimp and avocado make a delicious filling in this nutrition-packed omelette.

Ingredients
- 1 cup / 325 g
 - small or chopped cooked shrimp
 - 1
 - tomato, diced
 - 1/2
 - avocado, diced
 - cilantro to taste
 - 3/4 cup / 175 g
 - Egg Creations Fat Free Original, well shaken
 
Directions
For three omelettes, combine small or chopped cooked shrimp, tomato, diced avocado and chopped cilantro to taste. Set aside.
Pour 3/4 cup (175 mL) Egg Creations™ Fat Free Original into hot 8” (20cm) frying pan sprayed with a vegetable cooking spray. Cook, stirring with the back of a fork until almost set but still creamy.
Scatter 1/3 of filling over half the omelette. Fold unfilled half over the filling.
Slide out onto serving plate. Repeat omelettes using remaining filling.
