Ingredients
1 | avocado |
1 tbsp / 15 ml | mild or medium salsa |
salt and pepper (optional) | |
2 slice | whole grain bread, toasted |
2 tbsp / 30 ml | cooked corn kernels |
2 tbsp / 30 ml | crumbled feta |
sliced green onion (garnish) | |

hot sauce (optional) |
Directions
Mash avocado with salsa. Season with salt, pepper and hot sauce to taste (if using).
Spread avocado mixture over toasted bread. Top with corn and Omega 3 eggs. Sprinkle with feta and green onion. Serve immediately.
Tips
Replace the corn with diced peppers.
For a spicier sandwich, use hot salsa or a favourite hot sauce instead of mild salsa.
