Ingredients
2 tbsp / 30 ml | salsa |
2 tbsp / 30 ml | light sour cream |
2 tbsp / 30 ml | finely chopped green onion |
1/4 tsp / 1 ml | ground cumin (optional) |
1 1/2 cup / 375 g | Egg Creations Fat Free Garden Vegetable, well shaken |
4 | lettuce leaves |
1 | small avocado, thinly sliced |
4 | whole-wheat bagels, toasted |
Directions
Pour the eggs into a greased, 8-inch (2 L) square baking dish. Microwave, on high, for 4 to 5 minutes or just until set. Cut into 4 portions.
Meanwhile, stir the salsa with the sour cream, green onion and cumin (if using).
Line the bottom halves of each bagel with lettuce and avocado. Top with a portion of the omelet and a dollop of the salsa mixture; cap with remaining bagel halves.
Tips
Add pickled jalapenos for a sandwich with some bite.

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
