Ingredients

 - avocado
 - 1 tbsp / 15 ml
 - mild or medium salsa
 - salt and pepper (optional)
 - 2 slice
 - whole grain bread, toasted
 - 2 tbsp / 30 ml
 - cooked corn kernels
 - 2 tbsp / 30 ml
 - crumbled feta
 - sliced green onion (garnish)
 - 1 package / 84 g

Directions
Mash avocado with salsa. Season with salt, pepper and hot sauce to taste (if using).
Spread avocado mixture over toasted bread. Top with corn and Omega 3 eggs. Sprinkle with feta and green onion. Serve immediately.
Tips
Replace the corn with diced peppers.
For a spicier sandwich, use hot salsa or a favourite hot sauce instead of mild salsa.
